We had a crazy busy weekend…to the point that I thought I just might have a nervous breakdown (HA! Just kidding…well, maybe only kidding a little…) But it was all worth it in the end!
Accomplished on Friday:
- I got someone to clean my house. And YES, this is marked as an accomplishment on my list! First of all, because I’m pretty anal about cleaning my house and it’s hard for me to “let go” and let someone else do it. And second of all because it’s hard to find someone to clean a house around these parts. But I knew I couldn’t get everything done this weekend – there was just no way.
- Grocery shopping
Well, I’m gonna go ahead with it. There are a few things that I’m still working on, but, for the most part, here is Fall at the House of Campbell!
We’re still working on things outside the house – like landscaping, and new paint job, but it doesn’t look half-bad! (Even with the gray skies…someone needs to remind Florida that it’s the Sunshine State!)
There is one thing that drives me crazy about the front of this house. It’s not EVEN. (Yes, I’m OCD, you didn’t know that before now?!) The left column is farther left than the right column is right, and the left side of the porch (by the front door) is set back further than the right side! Since I LOVE symmetry, it was very difficult to decorate the front porch – but I’m sure I’ll get used to it eventually!
I know, I promised to show you ALL of my Fall decor around the house, but we’ll start with the Fall Holiday Shelf, since I like to keep the Holiday Shelf posts as their own little entity. I’ll show you the entire house tomorrow!
…there she is!
Yes, we are having house guests again! It may seem a bit much, since we only moved into the house in April, and we had house guests in July, now in September, and we will have more in October, but you know what? We really enjoy hosting folks in our home!
When we were house-hunting, we were looking for the standard 3-bedroom 3-bath 2-car garage home. The perfect “starter home”, ya know? Since it was our first. When we looked at the house we ended up buying, I remember thinking, and telling Jerrod, “4 bedrooms! We don’t need 4 bedrooms! Is that greedy of us to place an offer on a house with 4 bedrooms?” We felt such a peace about it, so we ended up going ahead with the offer, and then the purchase. So we decided then, since we had the space, we would use it, and use it well.
This coming weekend we are hosting 4 boys and a chaperone from the African Children’s Choir, and we are SO excited! The group will be at our church to minister on Sunday morning, so we’ll pick our crew up on Saturday evening, feed them, let them get a good night’s sleep, and then feed them again Sunday morning before heading to church to watch them sing! (They are SO sweet – if you’ve never heard of the African Children’s Choir before, it’s an amazing organization. PLEASE check out their website (www.africanchildrenschoir.com), and listen to them sing. BEAUTIFUL voices, BEAUTIFUL children.)
In my quest to keep us as healthy as possible these days, I’ve been paying close attention to the recipes I try out. Less gravy-covered, cheese-smothered, carb infested things. More clean foods, more preservative free foods, more sugar-free foods. Follow me? So when I came across a recipe for Zucchini Lasagna on Pinterest, I KNEW I had to try this one.
1 pound ground beef or ground turkey
1 cup green bell pepper, chopped
1 cup onion, chopped
1 zucchini, sliced thinly (I actually used one-and-a-half)
1 box of mushrooms, sliced (more or less to your liking – and I didn’t add these in because my hubby HATES mushrooms)
1 (24-ounce) jar of marinara sauce
1/2 cup fresh shredded Parmesan cheese (optional)
1 cup low-fat mozzarella cheese (optional) – can add more or less!
3 cloves garlic, minced (I used 1.5 teaspoons garlic salt instead)
Salt and pepper to taste
