The Quest for the Perfect Pie Crust

Several years back, I made a fresh strawberry pie. The filling and home-made whipped cream were perfect…but the crust was a bust. I’m not even joking. It was awful. And I decided then that perhaps I just wasn’t one of those people who made pies.

Why not use a prepared crust, you ask? That’s just not exactly my style. When I’m baking, I like to bake from scratch. And I was so intimidated by pies I let several years go by without even touching a pie recipe.

That all changed a few weeks before Thanksgiving, when I was assigned “pies”.

I realized that I had a choice. I could go to the freezer section and pick out the most beautiful pies I could find, or I could get over my fear of pie crusts and figure it out and just DO it.

So I posed a question to my Facebook friends about pie crusts, and before I knew it, I had been given this link:

Do you see that recipe for pie crust? The one with only four ingredients?! I couldn’t believe it. So I had to test it myself, of course.

I was pretty impressed with how it turned out, and it was SO EASY!!!

So, for Thanksgiving, I used the above crust and made a Mississippi Pecan Pie (http://lifewithlorelai.wordpress.com/2013/11/12/mississippi-pecan-pie-printable-recipe/)

…and a Marshmallow Whipped Pumpkin Pie (http://kitchenmeetsgirl.com/marshmallow-pumpkin-pie/(Well, the Marshmallow Whipped Pumpkin Pie uses a graham cracker crust…but I made that from scratch, too!)

I was pretty thrilled with how everything turned out! So were the partakers of the pies! And I’ve got to say, this pie crust recipe is a HUGE WINNER!

  1. Great post! I also love to bake but I tend to over-think things sometimes instead of just sticking my neck out there and going for it! This looks delicious! It’s only 8:20am where I am and now I want pie! Oh goodness it’s going to be a long day 🙂

  2. Skip the crust. 🙂 I am a really bad crust maker as well, when we do have pie I always try a different crust recipe hoping I will somehow find the perfect crust for me. Have you tried a GF version of this crust?

  3. Ah, a woman after my own heart! I am not willing to take shortcuts either, and darn it, if I set out to do something I WILL accomplish it. Your pies look lovely! It took me about five years to come up with an awesome pie crust recipe, and now I am diligently working on creating a whole wheat pie crust that is to die for. My favorite way to eat pie crust is with cinnamon infused into it via an extract or ground cinnamon added, and my pie crust tip for you is use lard and KEEP EVERYTHING COLD! That makes the very best flaky pie crusts you will ever come up with!

  4. Ok, so I’ve got my coffee and reading posts online. Then I come across this and my stomach is now growling like a wolf! The pictures make me want to reach in a grab a piece. I love pies! Especially apple and pumpkin, but (like you said), I’m also not very good with the crust. I’m definitely going to try this EASY recipe and make me some apple pie! Thanks so much for sharing.

  6. One thing I’ve never had a problem with was pie crust but I hear all the time how difficult or daunting it can be for some people. My mother says that I just have a knack for it. I say that when you find a recipe that works for you, hang on to it! Anything to make your life easier.

  8. Oh Yum.. and my husband would be so happy if I learned how to make a blueberry pie! (all our frozen berries from the backyard). I am such a terrible cook, baker.. I really should just take the chance and try this 🙂 I think you’ve given me a bit of courage!
